1. Chicken Karahi

Ingredients:

ü  Chicken: 1 kg (cut into pieces)

ü  Tomatoes: 4-5 medium-sized (chopped)

ü  Green chilies: 4-5 (sliced)

ü  Ginger: 2 tbsp (julienned)

ü  Garlic: 2 tbsp (chopped)

ü  Red chili powder: 1 tsp

ü  Turmeric powder: ½ tsp

ü  Coriander powder: 1 tsp

ü  Cumin seeds: 1 tsp

ü  Garam masala: 1 tsp

ü  Salt: to taste

ü  Oil: ½ cup

ü  Fresh coriander: for garnish

Instructions For Healthy Food Recipes:

v Heat oil in a karahi (wok) and add garlic. Sauté until golden brown.

v Add chicken and fry until it changes color.

v Add chopped tomatoes, red chili powder, turmeric, coriander powder, cumin seeds, and salt. Cook until the tomatoes are soft and the oil separates.

v Add green chilies and ginger. Cook on high heat until the chicken is fully cooked.

v Sprinkle garam masala on top and garnish with fresh coriander.

v Serve hot with naan or roti.

2. Chicken Biryani

Ingredients:

ü  Chicken: 1 kg

ü  Basmati rice: 500 g (soaked for 30 minutes)

ü  Onions: 2 large (sliced)

ü  Tomatoes: 2 large (chopped)

ü  Yogurt: 1 cup

ü  Ginger-garlic paste: 2 tbsp

ü  Green chilies: 4-5

ü  Red chili powder: 1 tsp

ü  Turmeric powder: ½ tsp

ü  Biryani masala: 2 tbsp

ü  Garam masala: 1 tsp

ü  Fresh coriander and mint: a handful

ü  Lemon juice: 2 tbsp

ü  Oil: ½ cup

ü  Salt: to taste

Instructions For Simple Food Recipes:

v Heat oil in a pot and fry onions until golden brown. Remove half the onions and set aside.

v Add ginger-garlic paste to the remaining onions and sauté for a minute.

v Add chicken and fry until it changes color. Then add chopped tomatoes, red chili powder, turmeric, biryani masala, and salt. Cook until the tomatoes are soft.

v Add yogurt, green chilies, coriander, and mint. Cook until the chicken is fully cooked.

v Boil rice in salted water until 70% cooked. Drain and set aside.

v Layer the chicken mixture and rice in a pot. Sprinkle garam masala, fried onions, and lemon juice on top.

v Cover the pot and cook on low heat (dum) for 20-25 minutes.

v Serve hot with raita and salad.

3. Chicken Malai Boti

Ingredients:

ü  Boneless chicken: 500 g (cut into cubes)

ü  Cream: ½ cup

ü  Yogurt: ¼ cup

ü  Ginger-garlic paste: 2 tbsp

ü  Green chilies: 2-3 (finely chopped)

ü  Black pepper: 1 tsp

ü  White pepper: 1 tsp

ü  Cumin powder: 1 tsp

ü  Garam masala: 1 tsp

ü  Lemon juice: 2 tbsp

ü  Salt: to taste

ü  Oil: for grilling

Instructions:

v In a bowl, mix cream, yogurt, ginger-garlic paste, green chilies, black pepper, white pepper, cumin powder, garam masala, lemon juice, and salt.

v Add chicken cubes to the marinade and mix well. Marinate for at least 2 hours (overnight is better).

v Skewer the chicken cubes and grill them on a charcoal grill or in an oven until fully cooked, basting with oil occasionally.

v Serve hot with naan, chutney, or salad.

4. Chicken Korma

Ingredients:

ü  Chicken: 1 kg

ü  Onions: 2 large (sliced and fried until golden brown)

ü  Yogurt: 1 cup

ü  Ginger-garlic paste: 2 tbsp

ü  Red chili powder: 1 tsp

ü  Turmeric powder: ½ tsp

ü  Coriander powder: 1 tsp

ü  Garam masala: 1 tsp

ü  Whole spices: 1 bay leaf, 4-5 cloves, 2-3 cardamoms, 1 cinnamon stick

ü  Salt: to taste

ü  Ghee or oil: ½ cup

v Heat ghee/oil in a pot and add whole spices. Fry for a minute.

v Add ginger-garlic paste and fry until golden.

v Add chicken and fry until it changes color.

v Add yogurt, red chili powder, turmeric, coriander powder, and salt. Cook until the oil separates.

v Add fried onions and cook on low heat until the chicken is fully cooked and the gravy thickens.

v Sprinkle garam masala and cook for a few more minutes.

v Serve hot with naan or rice.
